Chicken and Rice Casserole

This is one that I came up with looking around my kitchen for something to throw together one night. My husband dislikes rice with a passion and he LOVED this casserole.

Ingredients:
  • 3 chicken breasts (frozen is fine)
  • 1 can cream of chicken soup
  • 1 sleeve townhouse crackers, crushed
  • 2 Tablespoons butter, melted
  • 1 package Uncle Ben's garden vegetable rice (microwaveable)
  • 3-4 medium potatoes, peeled and cubed
  • cheese (any) for topping
  • seasoning salt, to taste
Preheat oven to 350.

Boil chicken and potatoes (separately) until potatoes are tender and chicken is well done. Cook rice as directed on package.

Cut chicken into bite size pieces and mix in a medium bowl with potatoes, rice, cream of chicken soup and set aside.

In a medium baking dish, add melted butter and half of the crushed cracker into the bottom. Making a cracker crust.

Pour chicken mixture into baking dish and sprinkle seasoning salt and cheese over top. Finally add the remaining cracker crumbs and place in the oven, uncovered, for 25-30 minutes
Let cool 5 minutes and serve with a salad.

Serves 5.

Dog Food

Another uniquely named meal, but again delicious and very quick and easy to make! Please don't be turned off by the title as when you see it complete you will come back for more!

Ingredients:
  • 1 package polish sausage
  • 3-4 medium potatoes, sliced
  • 1/4 cup vegetable oil
  • 1/4 onion, sliced
  • salt and pepper to taste
Slice and fry polish sausage in a dry skillet until brown on both sides.

Heat oil in large skillet and place potatoes and onions in a single layer on the bottom of the pan. cook, flipping frequently until golden brown and tender.
Add sausage and cook together for 15 minutes.
Serve with ketchup as a dipping sauce.

Serves 4.

Grub

Although I know the name of this dish can be misleading, it is a really yummy dish. Another dish concocted in the Griffey household.

Ingredients:
  • 1 pound ground beef (or turkey)
  • 1 can pork'n'beans
  • 1 can corn
  • 1/4 teaspoon ketchup
  • 1/4 teaspoon mustar
  • salt and pepper to taste
Brown meat and drain. Mix meat, beans, corn, ketchup, and mustard together. Add salt and pepper as needed to extra flavor. Heat together on medium heat 10-15 minutes.

Serve with green beans and rolls.

Serves 5.

Cream of Chicken Soup Hamburgers

This is another Griffey classic that I grew up on. Extremely simple and quick to make on a busy night. Enjoy!

Ingredients:
  • 1 pound ground beef (or turkey)
  • 1 can cream of chicken soup
  • 1 package hamburger buns
Brown meat and drain. Add cream chicken soup to meat and stir. Heat on medium for 5-10 minutes or until hot.

Serve on hamburger buns with your favorite chips.

Serves 5.

Pancite

This dish is amazing. A dear friend of the family shared this with my mom years ago. After we added our own little twist we have come to love this dish! I really hope you enjoy this one.

Ingredients:
  • 3-4 frozen chicken breasts
  • 1 package rice sticks
  • 2 cups shredded cabbage
  • 2 cups shredded carrots
  • 1 small onion diced
  • 1 clove garlic diced
  • 3 Tablespoons vegetable oil
  • butter
  • soy sauce
Boil chicken until done. After chicken has finished, remove from water and set aside to cool do not drain the chicken water. After chicken has cooled cut into bite size pieces.
Place rice sticks in the pot of chicken water and let simmer on medium heat for 10-15 minutes.
Heat vegetable oil in large skillet. Saute onion and garlic first or two minutes. Add cabbage and carrots and saute for 5 minutes.  Add chicken to veggies and mix together. Next, add rice sticks and 1 cup of the chicken water to mixture and let simmer for 10 minutes (or until liquid has cooked out)

Serve with butter and soy sauce for seasoning.

Serves 6.

Baked Spaghetti

This is a classic dish that my Husband asked me to share. This is probably his favorite meal that I make.
This is extremely simple and quick. I hope you enjoy!

Ingredients:
  • 1 pound ground beef (or turkey)
  • 1 jar spaghetti sauce (any flavor)
  • 1 Tablespoon diced garlic
  • 1 Tablespoon diced onion
  • salt and pepper to taste
  • 1 box Rotini pasta
  • 2 cups mozzarella cheese
Preheat oven to 350.

Brown meat in a large skillet with onion and garlic. Drain and place back in skillet, pour spaghetti sauce over meat and mix well. Let sauce simmer over medium heat 10 minutes.

Cook pasta as directed on box. Drain and pour into sauce mixing until sauce has completely covered pasta.
Pour spaghetti into a 13X9 baking dish and sprinkle mozzarella cheese over top.
Place in the oven, uncovered, for 15-20 minutes.
Let stand 5 minutes. Serve with bread and a salad.

Serves 6-8.

Honey BBQ Meatloaf

This is a little concoction I came up with last summer that my Hubby absolutely loves. Take the normal (boring if you will) meatloaf and add a little extra flavor and a twist and boom! You have a wonderful new creation that has people drooling and coming back for seconds!

Ingredients:
  • 2 pounds ground beef (or turkey)
  • 1 cup Honey BBQ Sauce (Kraft only), separated
  • 1/2 cup Spicy Honey BBQ Sauce (Kraft only)
  • 3 Tablespoons dehydrated onion
  • 1/4 cup plain bread crumbs
  • 1 egg
  • 1/2 teaspoon seasoning salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon garlic powder
Preheat oven to 350.
In medium bowl, add meat 3/4 cup of honey bbq sauce, onions, egg, bread crumbs, seasoning salt, pepper, oregano, and garlic powder. Mix well with your hands.

Grease and 8"X8" glass baking dish. Add met mixture to dish and flatten meat to fit the pan. Spread remaining honey bbq sauce over uncooked meat. Place in the oven, uncovered, for 45-60 minutes.
15 minutes prior to meatloaf being done, remove from the oven and drain grease. Spread spicy honey bbq sauce over meatloaf and place it back in the oven for the remaining 15 minutes.

Let stand 5-10 minutes. Serve with twice baked mashed potatoes, green beans and rolls.

Serves 6.
