Chicken and Rice Casserole

This is one that I came up with looking around my kitchen for something to throw together one night. My husband dislikes rice with a passion and he LOVED this casserole.

Ingredients:
  • 3 chicken breasts (frozen is fine)
  • 1 can cream of chicken soup
  • 1 sleeve townhouse crackers, crushed
  • 2 Tablespoons butter, melted
  • 1 package Uncle Ben's garden vegetable rice (microwaveable)
  • 3-4 medium potatoes, peeled and cubed
  • cheese (any) for topping
  • seasoning salt, to taste
Preheat oven to 350.

Boil chicken and potatoes (separately) until potatoes are tender and chicken is well done. Cook rice as directed on package.

Cut chicken into bite size pieces and mix in a medium bowl with potatoes, rice, cream of chicken soup and set aside.

In a medium baking dish, add melted butter and half of the crushed cracker into the bottom. Making a cracker crust.

Pour chicken mixture into baking dish and sprinkle seasoning salt and cheese over top. Finally add the remaining cracker crumbs and place in the oven, uncovered, for 25-30 minutes
Let cool 5 minutes and serve with a salad.

Serves 5.

Dog Food

Another uniquely named meal, but again delicious and very quick and easy to make! Please don't be turned off by the title as when you see it complete you will come back for more!

Ingredients:
  • 1 package polish sausage
  • 3-4 medium potatoes, sliced
  • 1/4 cup vegetable oil
  • 1/4 onion, sliced
  • salt and pepper to taste
Slice and fry polish sausage in a dry skillet until brown on both sides.

Heat oil in large skillet and place potatoes and onions in a single layer on the bottom of the pan. cook, flipping frequently until golden brown and tender.
Add sausage and cook together for 15 minutes.
Serve with ketchup as a dipping sauce.

Serves 4.

Grub

Although I know the name of this dish can be misleading, it is a really yummy dish. Another dish concocted in the Griffey household.

Ingredients:
  • 1 pound ground beef (or turkey)
  • 1 can pork'n'beans
  • 1 can corn
  • 1/4 teaspoon ketchup
  • 1/4 teaspoon mustar
  • salt and pepper to taste
Brown meat and drain. Mix meat, beans, corn, ketchup, and mustard together. Add salt and pepper as needed to extra flavor. Heat together on medium heat 10-15 minutes.

Serve with green beans and rolls.

Serves 5.

Cream of Chicken Soup Hamburgers

This is another Griffey classic that I grew up on. Extremely simple and quick to make on a busy night. Enjoy!

Ingredients:
  • 1 pound ground beef (or turkey)
  • 1 can cream of chicken soup
  • 1 package hamburger buns
Brown meat and drain. Add cream chicken soup to meat and stir. Heat on medium for 5-10 minutes or until hot.

Serve on hamburger buns with your favorite chips.

Serves 5.

Pancite

This dish is amazing. A dear friend of the family shared this with my mom years ago. After we added our own little twist we have come to love this dish! I really hope you enjoy this one.

Ingredients:
  • 3-4 frozen chicken breasts
  • 1 package rice sticks
  • 2 cups shredded cabbage
  • 2 cups shredded carrots
  • 1 small onion diced
  • 1 clove garlic diced
  • 3 Tablespoons vegetable oil
  • butter
  • soy sauce
Boil chicken until done. After chicken has finished, remove from water and set aside to cool do not drain the chicken water. After chicken has cooled cut into bite size pieces.
Place rice sticks in the pot of chicken water and let simmer on medium heat for 10-15 minutes.
Heat vegetable oil in large skillet. Saute onion and garlic first or two minutes. Add cabbage and carrots and saute for 5 minutes.  Add chicken to veggies and mix together. Next, add rice sticks and 1 cup of the chicken water to mixture and let simmer for 10 minutes (or until liquid has cooked out)

Serve with butter and soy sauce for seasoning.

Serves 6.

Baked Spaghetti

This is a classic dish that my Husband asked me to share. This is probably his favorite meal that I make.
This is extremely simple and quick. I hope you enjoy!

Ingredients:
  • 1 pound ground beef (or turkey)
  • 1 jar spaghetti sauce (any flavor)
  • 1 Tablespoon diced garlic
  • 1 Tablespoon diced onion
  • salt and pepper to taste
  • 1 box Rotini pasta
  • 2 cups mozzarella cheese
Preheat oven to 350.

Brown meat in a large skillet with onion and garlic. Drain and place back in skillet, pour spaghetti sauce over meat and mix well. Let sauce simmer over medium heat 10 minutes.

Cook pasta as directed on box. Drain and pour into sauce mixing until sauce has completely covered pasta.
Pour spaghetti into a 13X9 baking dish and sprinkle mozzarella cheese over top.
Place in the oven, uncovered, for 15-20 minutes.
Let stand 5 minutes. Serve with bread and a salad.

Serves 6-8.

Honey BBQ Meatloaf

This is a little concoction I came up with last summer that my Hubby absolutely loves. Take the normal (boring if you will) meatloaf and add a little extra flavor and a twist and boom! You have a wonderful new creation that has people drooling and coming back for seconds!

Ingredients:
  • 2 pounds ground beef (or turkey)
  • 1 cup Honey BBQ Sauce (Kraft only), separated
  • 1/2 cup Spicy Honey BBQ Sauce (Kraft only)
  • 3 Tablespoons dehydrated onion
  • 1/4 cup plain bread crumbs
  • 1 egg
  • 1/2 teaspoon seasoning salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon garlic powder
Preheat oven to 350.
In medium bowl, add meat 3/4 cup of honey bbq sauce, onions, egg, bread crumbs, seasoning salt, pepper, oregano, and garlic powder. Mix well with your hands.

Grease and 8"X8" glass baking dish. Add met mixture to dish and flatten meat to fit the pan. Spread remaining honey bbq sauce over uncooked meat. Place in the oven, uncovered, for 45-60 minutes.
15 minutes prior to meatloaf being done, remove from the oven and drain grease. Spread spicy honey bbq sauce over meatloaf and place it back in the oven for the remaining 15 minutes.

Let stand 5-10 minutes. Serve with twice baked mashed potatoes, green beans and rolls.

Serves 6.

Twice Baked Mashed Potatoes

This is a great side for my Honey BBQ Meatloaf, or maybe some BBQ chicken or pork chops.
I hope you enjoy this twist on homemade mashed potatoes.

Ingredients:
  • 5-6 medium potatoes, peeled, cubed
  • 1/4 cup butter
  • 1/4 cup sour cream
  • 4 Tablespoons Real Bacon Bits (not the hard crunchy ones, check the salad dressing isle)
  • 1/2 cup cheddar cheese
  • 1/2 teaspoon seasoning salt
  • 1/2 teaspoon pepper
Boil potatoes until tender and drain.
Add butter and sour cream. Mash with a whisk (this gives more of a baked potato texture), add bacon bits, cheese, seasoning salt, and pepper. Mix together and serve warm.

Serves 5.

Cheeseburger Pie

This yummy pie has been in my life since I can remember. I grew up having this meal at least once a month.
It is a quick to prep meal for when you have had a long day and just want to relax.

Ingredients:
  • 1 pound ground beef (or turkey)
  • 1 can tomato soup
  • 1 small bag frozen corn
  • 1 small bag of cheddar cheese
  • 2 packages (4 total) deep dish pie crusts
(Or 1 package deep dish pie crusts for the filling and 1 package of regular pie crusts for the top)

Preheat oven to 350

Bake two deep dish pie crusts as directed on package.
Brown meat and drain. Add soup, corn, and half bag of cheese and stir. Heat over medium until cheese is melted.

Pour cheeseburger mixture into prebaked pie crusts and sprinkle remaining cheese over both pies. Place unbaked crusts over pies and poke hole in the top with a fork for ventilation.
Place in the oven and bake 30-45 minutes or until pies are golden brown.
Let stand 5 minutes before serving.
Serve with fries or a salad.

Serves 6-7

Turkey Provolone Burgers

These are a healthy yummy substitute for greasy fatty burgers at any fast food joint. Full of flavor and the provolone adds so much flavor to the turkey patties it is delicious!

Ingredients:
  • 1-2 packages already formed turkey patties (4 to a package)
  • 1 package sliced provolone cheese
  • Seasoning salt
  • Hamburger buns
  • Lettuce
  • Tomato
  • Onion
  • Mayo
  • Mustard
  • Ketchup
(all toppings optional)

Heat a large skillet over med-hi heat.
Sprinkle seasoning salt on both sides of turkey patties and place in hot skillet cooking 2-3 minutes per side until fully cooked (turkey meat is gray in the middle, just make sure there is no pink)

While patties are still hot add 1 slice of provolone cheese to each patty and let melt. Place patties on a paper towel lined plate (if cooking more that 1 package.)

Serve on a bun with your favorite toppings.

The turkey provolone burgers are also really good in pita pockets. The combination really compliments itself.

Grilled Chicken Wraps

You know how you always go to McDonald's and get a chicken wrap and it just doesn't quite fill you up? Well these chicken wraps make the fast food ones look like rabbit food. These very tasty, very filling wraps will leave you feeling like you devoured a 5 course meal. I hope you enjoy these as much as we do!

Ingredients:
  • 1 pkg Tyson chicken tenders (fresh not frozen)
  • 3 tablespoons vegetable oil
  • 3 tablespoons seasoning salt
  • 1 teaspoon fresh ground pepper
  • 1/4 cup shredded cheddar cheese
  • 1 small can sliced black olives
  • 3 roma tomatoes, sliced
  • 1/3 cup red onion, diced
  • 1 cup ranch or italian dressing
  • 2 cups chopped lettuce
  • 1 pkg burrito size tortilla shells

Chicken:
Heat oil in a large skillet over med-hi heat.
Season chicken tenders with seasoning salt and pepper and place in hot skillet cooking 2-3 minutes and then flipping. continue this process until chicken is fully cooked.
While chicken is still hot, sprinkle cheddar cheese on top and let melt, placing chicken on a paper towel lined plate set aside.

Assembling Wraps:
Take a tortilla and spread desired dressing on it. Next place 2-3 pieces of chicken on the wrap and continue to layer vegetables over chicken.

Folding Wrap:
Once desired amount of filling has been placed in the tortilla, fold tortilla in half, turn and fold in each end then roll tightly until it looks like a burrito, cut in half and serve.

serves 4-5.

Cheesey Chicken Pasta Salad

This is a brand new recipe that was just approved by my very picky family hehe. This very simple dish is quick to make and kids LOVE it. Enjoy!

Ingredients:
Chicken:
  • 1 pkg Tyson chicken tenders (fresh not frozen)
  • 3 tablespoons vegetable oil
  • 3 tablespoons seasoning salt
  • 1 teaspoon fresh ground pepper
  • 1/2 cup shredded cheddar cheese
Pasta Salad:
  • 1 box tri-color pasta
  • 1/2 cup Italian Dressing
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup diced red onion
  • 1/2 cup diced tomato
  • 1 small can sliced black olives
  • 1/4 cup chopped lettuce

Pasta Salad:
Boil tri-color pasta with olive oil until tender. Drain and rinse in cold water until pasta is room temperature.
In a medium bowl mix pasta, dressing, black olives, tomatoes, onions, and lettuce until well mixed. Place in refrigerator and let chill 20-30 minutes.


Chicken:
Heat vegetable oil in large skillet on med-hi heat.
Season chicken with seasoning salt and pepper and place in hot oil.
Let cook 2-3 minutes and flip continuing to do so until chicken is fully cooked.
Sprinkle with cheddar cheese and let melt.
Place chicken on a paper towel lined plate and let cool 10-15 minutes.
Cut into cube and pour over top pasta salad and serve.

Serves 6-7

Chicken Enchilada's

Chicken Enchilada's is an easy recipe that my sister gave to me years ago. It has since then become a favorite among my family and friends and anyone else that I have made it for. It is a simple recipe with loads of flavor and I hope that you enjoy!

Ingredients:

  • 3-5 Chicken Breasts (frozen or fresh)
  • Burrito or Enchilada size Tortilla Shells
  • 2 cups sour cream
  • 1 can cream of chicken soup
  • 4 cups Mexican mix shredded cheese
  • 1sm. can enchilada (red) sauce
  • 1 can refried beans (optional)

Preheat oven to 350 degrees.

In a large pot, boil chicken 30-45 minutes, or until thoroughly cooked. Drain and set aside to cool.

In a large mixing bowl add sour cream and cream of chicken soup mixing until well blended.
Take chicken, cut into small cubes and add to sour cream mixture stirring until blended.

Grease a 13x9 pan with cooking spray and set aside.

To Assemble Enchilada's:
Take tortilla, spread refried beans (if using) on the tortilla first, then add chicken mixture and sprinkle with cheese. Roll tightly and place in pan. Repeat these steps until mixture is gone and/or pan is full.
Once filled, pour enchilada(red) sauce over enchilada's and place, uncovered, in the oven for 25-30 minutes.
Take pan out of the oven sprinkle desired amount of the mexican mix cheese on top and place back in the oven for about 10 minutes.

Let stand 5 minutes and serve.

Serves 8-10. Great for lunches. Refrigerate covered for up to a week.
